Sunflower Burgers

Steve came home and made me dinner tonight!  He has a saying he always is telling me, "If I can do it anyone can".  He has successfully altered his life from being almost 300lbs in 2010 to today, 2012, a healthy 205lbs.  We are so happy and proud of his lifestyle changes.

Sunflower burgers here they are, thanks STEVE!!

Ingredients:
2 cups raw sunflower seeds
1tsp garlic powder
1/2tsp thyme
1/2tsp oregano
1/2tsp cumin
1/2tsp turmeric
1/4tsp smoky paprika
1/2tsp Herbs de Provence
1 carrot
handful of parsley
1cup cooked/cooled short grain brown rice
1 egg or Flax egg (optional)

Directions:
Place everything except the rice in a food processor and blend until finely crumbled.  Add the rice and pulse until gooey and add an egg if needs help staying together.  Form in to patties and heat a pan with 1 TB olive oil on medium heat and cook each side for 3-5min. Grilling is recommended.




Salad:

2 cups spinach
1/2 cup green grapes (cut in half)
1/4 cup red onion (diced)
1/2 large avocado (cubed)
1/4 cup watercress
1/2 cup chopped almonds

Dressing:
1/4 cup olive oil
3-4 TB balsamic vinegar
1TB dijon mustard
1TB honey
salt and pepper to taste.

Combine the salad ingredients in a large bowl.  Mix the dressing in a small processor.  Put desire amount of dressing on the salad.
