On a cold snowy day the soup is on! Steve and I moved into our new apartment in Wymount and are enjoying the new feel and look. We both especially love the oven and are ready to get our cook on! So here's to you mom, your minestrone soup!
2c. coarsely chopped onion
1c. sliced celery
1/4c. minced fresh parsley or 1Tb dried
2 garlic cloves, minced
1/4c. extra virgin olive oil
5 cups vegetable broth
2c. chopped tomatoes
1can (15oz) tomato sauce
2c. coarsely chopped cabbage
1c. sliced carrots
2t. dried basil or fresh
1/2tsp. salt
1/4tsp. papper
1-1/2 sliced zucchini
1c. fresh cut green beans (don't even think about sub. for a can!)
1 can kidney beans
1 can garbanzo beans
1c. uncooked ditalini pasta
1c. grated parmasen cheese
In an 8qt soup pot sauté the onion, celery, garlic and parsley until tender. Stir in the broth, tomatoes, carrots, tomato sauce, cabbage, basil, salt and pepper. Bring to a boil then reduce heat and simmer for 1 hour. Then stir in the zucchini, beans and pasta. Simmer for 15-20 minutes or until the pasta and vegetables are tender. Serve topped with fresh parmasen cheese. Bom apetite! <3
