Ingredients:
Makes 2 large loaves
1c. uncooked lentils
1c. vegetable broth
1/2c. uncooked quinoa
3TB ground flax seed
1c. walnuts
3 garlic cloves
1.5c. sweet onion, chopped
1c. celery, diced
1c. carrot, shredded
2/3c. kernels from fresh corn on the cob
1/3c. sweet apple, peeled and shredded
1/3c. rasins
3/4c. Italian bread crumbs
1/2c. oat flour
3/4tsp. dried thyme
salt and pepper to taste
1. Take the ground flax in a bowl and whisk 1/2c. of water and set aside.
2. In a pot pour the vegetable broth in with the lentils and bring to a boil then turn the heat to medium and simmer for 20min. or until soft. Drain the liquid if there is any.
3. In another pot cook the quinoa with 1.5c of water. Bring to a boil and simmer for 15min or until soft. and water is all gone.
4.Toast the walnuts on 325F or 350F for 8-10min. Don't let them burn! and set aside to cool.
5. Pre-heat oven to 350F.
6. In a skillet heat a tablespoon of olive oil and sauté the onion and garlic for 5min. Add the celery, carrot, corn, apple and rasins with some salt and pepper. Cook for another 5min. Set aside to cool.
7. In a large bowl mix together all the ingredients. Grease a bread pan and firmly press the batter into the pan. Bake for 30-40min. Top with a glaze or your favorite BBQ sauce, serve with some apple sauce :) yum...
