Pumpkin Donut Bites

Recipe from Oh She Glows :)

Dough:
1/2tsp apple cider vinegar
6TB almond milk
1/2c. pureed pumpkin
1/4c. organic sugar
3TB unsweetened apple sauce
2TB packed brown sugar
2TB earth balance
2tsp. baking powder
1/4tsp baking soda
1tsp. cinnamon
1/2tsp. ginger
1/4tsp. nutmeg
1/2tsp salt
1 1/2c. whole wheat flour (I use Bob's Red Mill)

The coating:
1/4c. earth balance
1/4c. sugar
2tsp. cinnamon

1. Preheat oven to 350F.  Grease a baking sheet.
2. In a large bowl whisk together the vinegar, milk, pumpkin, apple sauce, sugars and melted earth balance.
3. In a smaller bowl mix together the dry ingredients: baking powder, baking soda, cinnamon, ginger, nutmeg, salt and flour.
4. Mix the dry ingredients with the wet and then spoon the batter into little blobs on the baking sheet. Bake for 10-12 min. Place them on a cooling wrack.
5. Melt the earth balance and in a small bowl mix together the sugar and cinnamon.
6. Once the donut holes are cool dip them in the earth balance and roll them in the cinnamon and sugar.
