Savory Spaghetti Squash

Today was exhausting, but Steve and I were determined to cook something good...

1 Spaghetti Squash

Pre-heat oven to 375F. Slice the squash in half and scoop out the inside.  In a sided baking pan place 1/2" water.  Sprinkle salt and pepper on the squash and put it face down in the pan.  Bake for 30-40 minutes until it is soft inside.  Once it is finished baking, with a fork scrape the insides out into a plate.  It will be stringing like spaghetti noodles!

1TB olive oil
2 garlic cloves, minced
1/3c. parsley or basil
1/4c. fresh shredded parmesan
salt and pepper to taste

Heat up oil in a pan and sauté the minced garlic for a minute.  Add the spaghetti squash and stir.  Then add the parsley or basil and mix together.  When it is at the desired consistency add the fresh parmesan and salt and pepper to taste.

Top with your favorite tomato sauce and serve. :)
