Mashed Cauliflower

Broccoli and cauliflower are two vegetables that have vital minerals and nutrients but are better absorbed by the body when they are steamed.  If they are boiled all the nutrients goes into the water so steaming is definitely the way to get the benefits of these delicious vegetables.
  
Ingredients:
1 head of cauliflower
2-4 garlic cloves
salt and pepper to taste
2TB earth balance
1TB almond milk
2-3TB nutritional yeast
1TB fresh chives or green onions

herbs of choice:
1TB rosemary or dill or parsley

Optional add ins:
fresh peas

Directions:
1. Steam a full head of cauliflower, in a pot with one inch of water place in a vegetable steam basket and wait for the water to come to a boil.  Add the cauliflower and cut the head into smaller pieces to reduce steam time.  Once the water is boiling add the cauliflower florets and reduce the heat to a simmer, cover the pot and let it steam for 10-15minutes.  Let it cool for 5min.
2. In a food processor blend up the garlic cloves (optional roast the garlic), and chives and fresh herb of choice, set aside in a bowl.  Next puree the steamed cauliflower and add the earth balance, milk, nutritional yeast and blend until smooth.  Lastly combine the seasonings and optional peas then serve!
