PUMPKIN CHOCOLATE CHIP WAFFLES


1/4c. brown sugar
3Tb. cornstratch
11/4c. wheat flour
11/2tsp. baking powder
1/2tsp. salt
2tsp. cinnamon
2tsp. ginger
1/2tsp. nutmeg
2 large eggs
1cup milk (I used almond milk)
1cup canned pumpkin
4Tb. unsalted butter, melted
1tsp. pure vanilla extract
1/4c. dark chocolate chips


Directions:
Combine the dry ingredients in a large bowl, whisk together and put to the side. Separate the egg whites from the egg yokes.  The bowl with the egg yokes put in the wet ingredients, milk, pumpkin, melted butter, and vanilla.  With the egg whites use a hand mixture and mix until stiff peaks.  Add the wet ingredients to the dry and then fold in the fluffy egg whites. Add the chocolate chips.

Heat up the waffle iron and start cooking them!!  Enjoy!
