Falafel





Falafel:

2cans chickpeas
1cup packed parsley
1/2cup packed cilantro
2garlic cloves
2 scallions chopped
1/4cup flour
1tsp. cumin
1tsp. coriander
3/4tsp. salt
1/4tsp pepper
2Tbsp. olive oil
Optional: spoon full of sesame seeds, 1tsp paprika

In a food processor, combine the ingredients until it’s a think paste.  Roll into 12 balls. Preheat oven 200 degrees F.  In a pan, heat 1 Tbsp olive oil and cook the falafel till they are brown and crispy.  This should take about 10min.  Then place them in the oven to keep warm.

























Tzatziki:
3cups plain greek yogurt
3Tbsp. fresh lemon juice
2 medium cucumbers (seeded & diced)
1Tbsp salt
1Tbsp finely chopped dill

Use a food processor to mix and combine the ingredients.
 

















The tortillas came in handy once again!

Israeli Salad:
18 cucumbers (chopped)
4 roma tomatoes (chopped really small)
1cup fresh parsley (chopped)
½ cup fresh mint (leaves chopped)
½ cup olive oil
2Tbsp fresh lemon juice
Sea salt & black pepper

Combine all the ingredients together in a large bowl. (no photo yet)
