Zucchini Cookies

1 1/4 cup Whole Wheat flour
1tsp. baking soda
1/2tsp salt
1tsp cinnamon
4TB room temp. earth balance
1/4cup packed dark brown sugar
1 tsp. vanilla extract
1 large egg or flax seed/chia seed substitute
1 cup shredded zucchini
2 cups old fashion oats
1 cup semi-sweet chocolate chips
3/4 cup dried cranberries 

Preheat the oven to 350 degrees F.  Line a cookie sheet with parchment paper and set it aside.
In a medium mixing bowl mix the flour, baking soda, salt and cinnamon.  In a large mixing bowl combine the earth balance and brown sugar and mix until smooth, then add the vanilla and egg and mix in.  Next add the shredded zucchini.  Slowly add the flour mixture to the wet mixing bowl and then add the oats, chocolate chips and cranberries.  Drop a heaping tablespoon of batter on the cookie sheet, 2 inches apart and bake for 15 minutes.  Remove the cookies on to a cooling wrack and cool completely before eating.
