Spooky Sister Salad


There's something about sisterhood that makes me smile. Thanks for hanging out with me sis!

1pkg. tempeh (five grain), sliced 1cm thick
2TB tamari
1/2tsp dried garlic
1/2tsp. dried ginger
1/4tsp. coriander
1tsp. maple syrup

Mix the tamari seasonings and maple syrup in a small bowl.  Place the sliced tempeh in a dish and pour the marinade over.  Let it sit. In a sauce pan heat 2TB olive oil on medium-low. Add the the tempeh and cover.  After about 5min. turn the tempeh and cook for another 5min.

Dressing:
2TB almond butter
2TB tamari
3TB rice vinegar
1 small clove of garlic, minced
1tsp fresh grated ginger
1tsp maple syrup
1TB olive oil

Mix all the ingredients in a small bowl and set to the side.

Salad:
All these ingredients are from La Nay Ferme, a local farm here in Provo, UT.
fresh greens
2 green onions
2 small green bell peppers
3-4 tomatoes
a handful of fresh basil
1/4c. pine nuts

Chop the vegetables up and place in a small bowl.  In a larger bowl place the mixed greens.  Dish up on a plate the fresh green leaves, topped with vegetable mixture and pine nuts, lastly add the tempeh and the dressing.  Bom apetite!

  1. So glad you found La Nay Ferme! I really liked Clinton (is that his name?) Wish I could have done more with it, but the little group I got together to split the share though it was too expensive (really?!)
