Coconut Curry

Curry is the best to make with your husband because you'll get to see him cry. This recipe is one of Steve's and my favorites!! 


The Ingredients:


1 onion, chopped
3 cloves of garlic
1Tb fresh ginger
1 green chili, seeded
1Tb olive oil
1/2tsp turmeric 
1/2tsp coriander
1tsp cumin
1tsp curry
1/2 cauliflower
2 carrots
1 red potato
1c. green cabbage
1 zucchini
1 can sliced water chestnuts
1/2 can bean sprouts (or fresh)
1c. coconut milk
1/2tsp salt (to taste)


The Directions:


Heat sauté pan on medium and add the olive oil.  Using a food processor put in the onion, garlic, ginger and chilis.  When smooth put in the sauté pan. Then add the turmeric, coriander, cumin, curry and salt. Start adding the vegetables: chopped cauliflower, diced red potato, shredded green cabbage, sliced zucchini and drain the water chestnuts before putting them in.  Add the coconut milk.  Bring to a simmer and cook for 20 minutes or until veggies are tender. Add water as needed. Serve with brown rice.
