Good morning! It is so hard to get out of bed in the early dark mornings of winter. I can usually convince myself to move it when I think about breakfast and recently oatmeal has failed to motivate me no matter how creative it is. Time to spice things up with some chocolate coconut granola this winter to help myself jump out of bed and start my day. This granola goes great with yogurt, fruit, milk, coffee, wassail or whatever you are eating or drinking to keep warm in the morning.
2c. rolled oats
1c raw quinoa
1/2c. shelled hemp seeds
1/4c. chia seeds
1/2c. chopped pecans
1/4c. unsweetened shredded coconut
1/4 - 1/3c. maple syrup
1/3c. melted coconut oil
2TB cinnamon
1/2tsp vanilla extract
1tsp. sea salt
2TB cocoa powder
1/4c. dark chocolate chips
Preheat oven to 350 degrees F. Combine the dry ingredients in one bowl: oats, quinoa, hemp seeds, chia seeds, pecans (or nut of choice), shredded coconut. In a separate bowl melt the coconut oil and add the maple syrup, vanilla extract, cocoa powder, sea salt, and cinnamon. Mix the wet ingredients with the dry and lay flat on a baking sheet. Bake for 60min stirring occasionally. Let the granola cool before adding the chocolate chips. I recommend serving warm in coconut milk, a spoon full of peanut butter and sliced banana.
