Cookies are loaded with sugar and during this holiday season it is so hard to avoid those sugar bombs. I wanted to share a recipe that is sweet but sweet because of ripe fruit that has the fiber to digest the sugar properly. It's not 100% sugar free because of the chocolate chips but these little cookies are not the average sugar bomb either.
3 large ripe bananas
1tsp. vanilla extract
1/4c. coconut oil
2c. rolled oats
2/3c. almond meal
1/3c. finely shredded & unsweetened coconut
1/2tsp. cinnamon
1/2tsp. sea salt
1tsp. baking powder
6-7 oz. chocolate dark chips
Preheat the oven to 350 degrees. In a large bowl mash the bananas and combine the vanilla and coconut oil. In a smaller bowl whisk the oats, almond meal, shredded coconut, cinnamon sea salt and baking powder. Add the oat mixture to the banana mixture. With clean hands fold in the chocolate chips. Place 2tsp. dollops of dough on a non-stick baking sheet or parchment paper and bake for 14-16min. Bake as long as you can without the burning the bottoms. Makes about 3 dozen bite-size cookies.
